Cafe Rio Ranch Dressing
1 buttermilk ranch dressing packet (make as per recipe)
2 tomatillos (tomato like vegetable with a husk around them. see image below.)
½ bunch of cilantro
1 clove garlic
Juice of 1 lime (you could use 1-2 tbsp of lime juice)
1 jalapeƱo (use the seeds too if you like it spicy. you could substitute a few drops of green tobasco for the jalapeno.)
How to: Make the packet of ranch, allow it to set, and cool in refrigerator. Remove skins of the tomatillos, rinse the outside, & cut into small squares. In a medium sauce pan heat a tsp. of butter. Once the butter is melted and pan is warm; add the tomatillos. Cook the tomatillos until light brown (about 10-15 minutes). Clean the cilantro and cut long stems from the cilantro. Place the cilantro in a blender or in a food processor. Blend the cilantro. Once the the cilantro is blended add lime juice, jalapeno, and garlic. Blend all those together until FINELY chopped. Add to this mixture 2 cups of ranch. Pulse several times until completely combined. Pour into a container, cool, and ENJOY!

i also made cilantro-lime chicken to make tacos for this dressing. (a wing it recipe turned DELICIOUS and recorded!)
How to: On medium heat, heat a pan with a teaspoon of olive oil. Cut and clean chicken into small chunks. Place in a medium bowl and add in all ingredients. Mix very well and place in hot pan. Cook until brown. Cover and turn to low until all the juices evaporate and soak up! Enjoy!

Cilantro-Lime Chicken
3-4 breast of chicken cleaned and cut into small pieces
2 tablespoons of lime juice
1 teaspoon of dried or fresh cilantro
3/4 teaspoon of garlic
1/2 teaspoon of garlic salt
1/2 teaspoon of crushed red pepper (more or less to heat preference)
salt & pepper
1 teaspoon of olive oil for pan
